I don’t know about y’all, but any dessert that requires a flaky, buttery crust is right up my alley! I’m also a big fan of mixing flavors like sweet and savory or tangy with sweet. The combination of flavors will send your tastebuds on a journey of enjoyment.

Lemon desserts are something I have always struggled with. As much as I love lemon, there is such a thing as too much lemon. Lemons are noted to be tangy and will often make your lips pucker. This is why I enjoy combining them with ingredients a little on the sweeter side to create a balance. A dessert that is pure tart-flavored simply isn’t my thing.

These are easy to whip up and have on hand for after-school snacks, to put in lunches, take to the office, or as a party dessert. I promise they’ll be a hit!

Can I use other flavors of jam?

The fun part about this recipe is that the jam can be replaced with other jam flavors including blueberry, cherry, raspberry, or strawberry. I had blackberry on hand and since that is my favorite combination with lemon, I ran with it. The results were amazing and these barely lasted long enough for me to get pictures!

Do I have to use Southern Gourmet Heavenly Lemon Pie Filling?

Other lemon pie filling will work, but why would you want to use others when Southern Gourmet offers the best? The flavor is bold and exactly what you’re looking for when it comes to a lemon dessert.

Equipment You’ll Need:

Quick Glance at the Ingredients for Blackberry Lemon Bars:

  • Southern Gourmet Heavenly Lemon Pie Filling (yes, you could use other brands, but why would you?!)
  • Unsalted butter – no one wants an overly salty crust
  • Granulated sugar – sweetness, please!
  • All-purpose flour – the standard for a delicious crust
  • Eggs – to create the rich, bold filling
  • Blackberry jam – blackberry and lemon are a perfect pair!
  • Salt – just a smidge will do
  • Pure vanilla extract – authentic is always better than imitation
  • Powdered sugar – used to dust the top, if desired

How to Make the Blackberry Lemon Bars:

Preheat your oven to 350°F.

Line a 13″ x 9″ baking pan with parchment paper. Be sure to leave an overhang to remove the bars once they are cooled.

To Make the Crust:

In a stand mixer, cream together the butter and granulated sugar. Add the pure vanilla extract and salt, mixing thoroughly until light and fluffy, using the paddle attachment.

With the mixer on low, add the flour, ½ cup at a time until fully incorporated.

Press the dough firmly into the pan until level across the bottom. Work the dough up the sides of the pan to create a ½ inch border around the sides.

Bake for 15 to 20 minutes until a light golden brown color.

To Make the Filling:

In a 2-quart saucepan, combine 2 slightly beaten egg yolks, ½ cup cold water, and the contents of your Southern Gourmet Heavenly Lemon Pie Filling Premium Mix.

Stir in 2 cups of very hot water and cook over medium heat, constantly stirring. When bubbles first break the surface and the filling thickens, about 5-7 minutes, continue to stir for 30 seconds. Remove from heat. Do not overcook.

Stir in 1 tablespoon of butter. Cool for 5 minutes. Reserve a quarter cup to mix with the blackberry jam. Whisk together until smooth.

Pour the filling over the top of your crust and spread evenly using a silicone spatula.

Using a spoon, drop dollops of the blackberry jam/lemon mixture on top of the lemon filling. Using a butter knife, carefully swirl the jam with the lemon filling. Be careful to not break through the crust.

Cover and cool in the refrigerator for at least 3 hours.

When ready to serve, sift powdered sugar over the top, if desired.

Cut. Serve. Enjoy!

Crust Ingredients:

  • 1 cup butter, room temperature, unsalted
