Salads are one of my favorite summer go-to meals. They are light, refreshing, and the ingredients and dressings are endless! Do you remember Ponderosa? We had one in our local meal years ago (as my kids say – The 1900’s) when I was in high school. One of my best friends and her boyfriend worked there, so it was a place that I frequented when I wanted a good meal.
Ponderosa had one of the most incredible salad bars. If you could put it on a salad, it was on that bar! For a working high school student, it was also very affordable. One of the cooks liked to offer suggestions for different salad toppings and I’m grateful that I tried a variety.
This salad is full of seasonal goodness with the blackberries and peaches – a little sweetness with a little green! They can be prepared in advance for meal prepping and makes a great side dish with your favorite cut of meat for dinner. Even if you don’t prepare the salad ahead of time, I highly recommend making the vinaigrette ahead of time to give the flavors time to marinate.

Ingredients to Make Blackberry Peach Salad and the Blackberry-Basil Vinaigrette:
- Extra virgin olive oil
- Champagne or white wine vinegar
- Dijon mustard
- Honey
- Blackberries
- Fresh basil
- Salt & pepper
- Baby spinach
- Baby arugula
- Peaches
- Walnuts
- Goat cheese
How to Make the Blackberry Peach Salad and Vinaigrette:
Add the olive oil, vinegar, Dijon mustard, honey, blackberries, and basil to a food processor container. Season with salt and black pepper, to taste, and process on high until thoroughly emulsified. Taste and add additional honey, salt, and/or black pepper, if desired. Transfer to an airtight container and store in the refrigerator until ready to serve.
Add the spinach and arugula to a large bowl and toss to combine. Transfer to a serving platter and top with sliced peaches, fresh blackberries, walnuts, and goat cheese.
Garnish with sprigs of fresh basil and drizzle some of the blackberry-basil vinaigrette on top. Serve immediately with remaining vinaigrette on the side. Enjoy!


Blackberry Peach Salad with Blackberry-Basil Vinaigrette

Ingredients
Vinaigrette Ingredients:
- ยฝ cup extra virgin olive oil
- ยผ cup champagne or white wine vinegar
- 1 teaspoon Dijon mustard
- 3 Tablespoons honey, preferably local
- 4-5 large blackberries, rinsed
- 1 Tablespoon fresh basil, roughly chopped
- Sea salt and black pepper, to taste
Salad Ingredients:
- 2 cups fresh baby spinach
- 2 cups fresh baby arugula
- 2 large ripe peaches, sliced
- 1 cup blackberries, washed and patted dry
- ยฝ cup walnuts, roughly chopped
- 4 oz. goat cheese, crumbled
- Fresh basil sprigs, for garnish
Instructions
