Vinegar-Based Carolina Slaw is more than just a side dish!

During the warmer summer months, I crave a delicious mayonnaise-based slaw. But it’s not the best dish to hold up for the warmer temperatures. That’s why I love a vinegar-based slaw. In addition to being a tasty side dish, this slaw is perfect for topping burgers, BBQ sandwiches, chicken wings, and more.

Creamy slaw is often on the sweeter side, while this vinegar-based slaw is tangy, not overly sweet, and crunchy. The stronger bite of flavor is unique and one that I can’t get enough of year-round.

Composed of cabbage, kale, onion, and carrots, you’re getting fresh ingredients that will leave you feeling full and satisfied without being overly-stuffed. Cabbage and kale are known for their anti-inflammatory properties as well as vitamin C benefits.

For years, I heard that slaw was one of the worst foods you could eat. In store-bought versions, you will be getting a lot of dairy and sugar. This version is dairy-free, paleo, and low carb. The white sugar can easily be replaced with maple syrup, too.

Carolina Slaw Ingredients:

  • Green Cabbage
  • Red Onion
  • White Onion
  • Carrots
  • Kale Leaves
  • Sea Salt & Black Pepper
  • Apple Cider Vinegar
  • White Sugar
  • Olive Oil
  • Dijon Mustard
  • Celery Seed

How to Make Carolina Slaw:

Prep all of your vegetables by cleaning, chopping, and slicing. Tough kale leaves can be tenderized by rubbing the leaves with a little olive oil before slicing.

Add cabbage, red onion, white onion, carrots, and kale to a large bowl and season with salt and black pepper, to taste. Toss to combine and set aside.

Add the vinegar and sugar to a small saucepan set over medium heat. Stir the mixture until the sugar thoroughly dissolves, approximately 1-2 minutes. Remove from heat and whisk in the oil, Dijon mustard, and celery seeds. While still warm, pour over the cabbage mixture and toss to combine thoroughly.

Cover with plastic wrap and chill in the refrigerator for 2 hours to overnight before serving. Enjoy!

Ingredients

  • 1 head green cabbage, cored and thinly sliced
  • 1 small (or ½ medium) red onion, thinly sliced
  • 1 small white onion, thinly sliced
  • 3 large carrots, grated
  • 4 large kale leaves, stalk removed and cut into thin ribbons
  • Sea salt and black pepper, to taste
  • ¾ cup apple cider vinegar
  • ½ cup white sugar
  • ½ cup vegetable or olive oil
  • 1 Tablespoon Dijon mustard
  • 2 teaspoons celery seeds
