The King is Back! Mardi Gras King Cake Coffee

If you’ve sunk your teeth into a King Cake before, you know that the cake (well, it’s technically a bread but with the sweet icing, we’re going to call it a cake!) is highlighted with flavors of cinnamon and vanilla. Because we are an on-the-go kind of family during the Spring, my oldest son and I like to have pods that we can pop in the Keurig and be out the door in just a few minutes.

The Mardi Gras King Cake blend is made with 100% select Arabica coffee beans. The roast is on a lighter side – meaning you’re getting more caffeine and a stronger flavor. It’s one step down from a full body and mid-level brightness. I like to dress my coffee up with sugar and creamer; however, the fragrance of this cup brewing made me want to try it straight. I’m not quite that advanced for a coffee drinker; however, the flavor was very appealing! 

As a limited time flavor, you’re going to want to stock up on a supply to hold you over through next year! The 12 pack of pods averages $8.49 per box. While I highly recommend making a cake to accompany the coffee, you can get your coffee fix with the Mardis Gras King Cake flavor!

The Recipe!

Easter King Cake

Celebrate Easter with a delicious King Cake and a cup of King Cake Community Coffee!

Dough

  • 1 cup milk (whole)
  • 3 eggs (large)
  • 8 tbsp butter (melted)
  • 4½ cups flour (all-purpose)
  • ½ cup sugar (granulated)
  • 2¼ tsp instant yeast (1 packet)

Filling

  • 2 8 oz cream cheese blocks
  • 1 tsp cinnamon

Icing

  • 2 cups sugar (powdered)
  • 3-4 tbsp milk
  • green sanding sugar
  • purple sanding sugar
  • yellow sanding sugar

Other Items

  • 1 Plastic Baby

Dough

  1. Use the whisk attachment of a stand mixer to mix the milk, eggs, and melted butter. 

  2. Tilt the top of the mixer and remove the whisk attachment. Replace with the dough hook.

  3. Add the flour, granulated sugar, yeast, and salt into the mixing bowl. Mix with a spoon until wet. 

  4. Mix with the dough hook for 10-12 minutes. The dough will remain wet and sticky.

  5. Place the dough in a greased bowl and cover with a towel. Let rise, at room temperature, until doubled in size.

Cake

  1. Cream together the cream cheese and cinnamon. Set aside.

  2. Roll out the dough onto a lightly floured surface approximately 18″ x 24″.

  3. Spread the cream cheese/cinnamon mixture evenly across the dough. 

  4. Begin rolling on the long side and pinch the ends. 

  5. Grease the bundt pan and place the roll into the pan, seam side up. 

  6. Cover with a towel and allow to rise again for approximately an hour. 

  7. Preheat the oven to 350-degrees.

  8. Place the bundt pan on the middle rack. Bake for 35-40 minutes.

  9. Allow the cake to cool 10-15 minutes, then remove from the pan. Completely cool before icing.

  10. Place a plastic baby into the cake from the bottom. 

Icing

  1. Mix the powdered sugar and milk together to create a thick, yet drizzle-worthy consistency.

  2. Drizzle the icing all over the cake. 

  3. Sprinkle the colored sanding sugars on the cake.

  4. Serve and enjoy! Tradition says whoever finds the baby in their slice will have good luck all year!
