Chunky Granola Banana Muffins + a Giveaway 2/22 Ended

Granola is one of my favorite ways to kickstart a morning! Aidan, the younger of my two boys, is not what you’d call a “morning” person; so, it’s up to this early bird mama to find a way to make it a little more bearable. From a wake-up at 5:15 a.m. to jumping on the bus at 6:25 a.m., they have a lot to pack into the mornings – breakfast being one of the most important. That’s why I give them grab-n-go muffins, made with Kitchfix Grain-Free Granola!

The Recipe!!

Chunky Granola Banana Muffins

Discover the softness of banana bread mixed with a slight crunch from Kitchfix Granola!

  • 1 1/4 cups flour
  • 1 tsp baking soda
  • 1/2 cup butter (salted)
  • 2/3 cup sugar
  • 1 egg
  • 2 tsp pure vanilla extract
  • 1 cup bananas (chunked)
  • 1/4 cup milk
  • 1 cup granola (divided)
  1. Preheat oven to 350.

  2. Prepare muffin tins with paper liners.

  3. In a large bowl, whisk the flour and baking soda together. Set aside. 

  4. In a large mixing bowl, cream softened stick of butter

  5. Add sugar and mix until fluffy. 

  6. Add egg, vanilla, milk. 

  7. Slowly add in flour mixture. 

  8. Using a spatula, fold in chunked bananas and granola

  9. Fill muffin cups 2/3 full. 

  10. Sprinkle remaining granola on top of the muffins

  11. Bake approximately 20-24 minutes – or until golden brown. 

  12. Cool and remove from muffin tin. 

  13. Enjoy!
