Lemon Bars

These lemon bars have a thick lemon filling over a sweet crust. They’re perfect for parties, family gatherings, and bake sales.
Ingredients
Crust
- ½ cup melted coconut oil
- ½ cup coconut sugar
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 1 cup oat flour
Filling
- 3 eggs plus 1 egg yolk
- ½ cup lemon juice, about 4 lemons
- ⅓ cup honey
- 3 tablespoons oat flour
Instructions
Preheat the oven to 350˚F (180˚C). Line a square 9 x 9-inch (23 x 23 cm) baking pan with parchment paper.
In a large bowl, combine the melted coconut oil, coconut sugar, vanilla extract, and salt; whisk to combine. Add the oat flour and stir to completely combine. The dough will be thick.
Press the dough in an even layer into the baking pan and bake in the preheated oven for 16 to 18 minutes or until the edges are lightly browned.
While the crust bakes, add the eggs, egg yolk, lemon juice, and honey to a large bowl and whisk to combine. Add the oat flour and whisk until smooth.
Pour the filling over the warmed crust and bake the bars for 20 minutes or until the center is set.
Remove the bars from the oven and allow to cool down to room temperature before refrigerating for 2 hours or until chilled.
Once cooled, remove the bars from the oven and cut into 12 squares.
Refrigerate leftover bars in an airtight container for up to 1 week.
Notes
These bars freeze incredibly well once sliced and individually wrapped for up to a month.
