One of my family’s favorite dishes is au gratin potatoes, but sometimes, I want to indulge in something a little healthier. Insert cauliflower! With this particular recipe, you can easily become a lover of cauliflower — even if it’s not your favorite vegetable.

This easy cauliflower gratin recipe is table-ready in about 40 minutes including prep and cook time. If you pre-cut your cauliflower, you can save time when you’re ready to throw this together. You can also make this a full entrée by adding chopped ham.

Although the recipe calls for Fontina cheese, I find that in my particular area, this isn’t easy to find. You can opt for Gruyère, provolone, or Gouda. Any of those three make a great substitute! Feel free to experiment and find your own personal favorite.

Ingredients to Make Creamy Cauliflower Gratin:

  • Extra virgin olive oil
  • Cauliflower
  • Butter
  • All-purpose flour
  • Milk
  • Heavy cream
  • Fontina cheese (or Gruyère, provolone, Gouda)
  • Parmesan cheese
  • Fresh Italian leaf parsley
  • Salt and black pepper

How to Make Creamy Cauliflower Gratin:

Preheat the oven to 400 degrees F and grease a large casserole dish with olive oil.

Bring a large pot of salted water to a boil. Par-boil the cauliflower for 3 minutes. Drain and return to the warm pot to let the steam dry some of the moisture from the cauliflower. Gently pat dry to remove any remaining moisture.

Melt the butter in a medium skillet over medium heat. Sprinkle in the flour and cook, stirring constantly, for 2-3 minutes. This removes the raw taste from the flour.

Slowly pour in the milk and heavy cream and continue cooking 2-3 minutes or until the mixture thickens.

Turn off the heat and add fontina. Stir until the cheese is fully melted.

Place the cauliflower florets in the prepared casserole dish. Pour the fontina béchamel all over the cauliflower. Sprinkle with parmesan cheese and place in oven to bake 20 minutes or until nicely browned and bubbly on top.

Remove from the oven and sprinkle with fresh parsley. Enjoy!

  • ½ cup parmesan cheese, shredded
  • ½ cup fresh Italian leaf parsley, chopped
