  • 2 1/2 chicken breast pieces, cut into pieces
  • 1 1/3 cup plain yogurt
  • 3 cloves of garlic, freshly minced
  • 1/2 teaspoon kosher salt

Flour mixture:

  • 3/4 cup all-purpose flour
  • 1/4 cup panko breadcrumbs
  • 2 teaspoons ground paprika
  • 1/4 teaspoons ground pepper
  • 3/4 teaspoon kosher salt

Cream sauce:

  • 26 oz, family-sized can of cream of chicken soup
  • 1/4 cup sour cream (use plain greek yogurt instead of sour cream)
  • 1 cup water
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground paprika
  • 1/4 teaspoon ground black pepper
  • 4 cups cooked egg noodles, prepared according to the package

  • 1 box of Ritz round crackers, crushed
  • 2 tablespoons of melted butter
  • 8 oz bacon bits, fried
  • 1/2 cup chopped sun-dried tomatoes
  • 6 oz mushrooms, sliced and sauteed
  • 6 oz cheddar cheese, shredded
  • Optional extras: Broccoli florets, chopped bell pepper, caramelized onions
  • Olive oil for frying

The chicken: In a container, mix the yogurt, garlic, and salt. Place the chicken cubes into the marinade and rub the marinade into the chicken. Make sure each piece is well coated. Cover the dish and marinate chicken for 4 hours in the refrigerator (overnight is best).

The casserole:  Preheat oven to 350 degrees Fahrenheit. Remove the marinated chicken from the container, be sure to discard any excess marinade. In a bowl, mix the flour, panko, paprika, pepper, and salt. Fold the chicken pieces into the flour mixture and coat them thoroughly.

In a cast-iron casserole dish, pour in a little olive oil. Arrange the chicken pieces in the dish. Place the chicken in the oven to cook for 15 minutes.

The creamy sauce: While the chicken is cooking, prepare the cream mixture. In a glass bowl or a mixing jug, combine the chicken soup, sour cream, and water. Add the spices to the mixture and set aside.

The toppings: In a large bowl, combine the crushed ritz crackers and melted butter. Set aside. Fry the bacon bits and mushrooms until golden brown and set aside.

Remove the cooked chicken from the oven, turn the chicken pieces over, slowly pour the cream mixture into the casserole dish. Mix into the chicken, add the cooked egg noodles and fold the ingredients together. Top with the crushed crackers, bacon bits, sundried tomatoes, and mushrooms. Top with shredded cheese and bake for 30 minutes. The cheese should be golden brown on top and melted.

Serve hot with a dollop of sour cream.

Tip: Leave the egg noodles out and serve on a bed of fluffy mashed potatoes

Homemade happiness

If you don’t have a can of chicken soup on hand, cream of mushroom soup would work well with this recipe. Homemade sauces sometimes taste better. While many creamy chicken casserole recipes can be quick and easy, it is always best to make sauces from scratch if you have the time.

Quick and tasty homemade sauce

  • 1/2 onion, diced
  • 1/4 cup butter
  • 3 cloves garlic, freshly minced
  • 1/4 cup flour
  • 2 cups chicken broth
  • 2 cups whole milk

Remove the chicken from the casserole dish and set it aside. In the casserole dish, melt the butter and add the onion. Sautee the onions for 5 minutes until soft, add the garlic, and sautee for one more minute. Stirring well, add the flour and combine with the butter over medium heat—Cook for 1 minute. Slowly add the chicken broth and milk. Bring the sauce to a simmer, stir continuously.

Add the chicken and continue with the recipe as listed above.

Tip: Make sure your casserole dish is safe to be used on the stovetop (like this one if it isn’t, use a skillet for your sauce instead.

Quick swaps

If you don’t have much time or have a leftover rotisserie chicken in the fridge, use it instead. All the ingredients can be combined into the casserole dish for a quick one-pot creamy chicken casserole. If you are using pre-cooked chicken, prepare the sauce in the casserole dish, add the chicken and then the toppings, and bake for 20 minutes.
