Baking cookies is one of the most nostalgic memories from my childhood. My mom aced the Ultimate Chocolate Chip Cookies on the back of Crisco cans when I was a kid. Every time we had a holiday party at school, my mom was nominated to provide the cookies because they were so loved. My own children love when she brings them, too!
Personally, my chocolate chip cookies can’t live up to hers. Hopefully I’ll eventually find that perfect technique on baking them! On a positive note, my kids do love other types of cookies that I make, including these Cherry Butterscotch Cookies. These are tasty any time of the year, but it seems like this one is made more often during the Thanksgiving and Christmas holiday season.

Ingredients You’ll Need:
- Softened butter
- Powdered sugar
- Egg yolk
- Vanilla extract
- Flour
- Corn starch
- Salt
- Coconut flakes
- Butterscotch bits
- Granulated sugar
- Candied cherries
How to Make the Cookies:
Preheat the oven to 375 degrees.
If using butterscotch chips, place them in a baggie and use a rolling pin or meat tenderizer to crush them into bits.
Cut cherries in half.
Cream butter with an electric mixer, then gradually add powdered sugar, and mix.
Beat in egg yolk and vanilla.
Sift flour, corn starch, and salt together, then blend into the creamed mixture.
Stir in coconut and butterscotch bits.
Shape rounded teaspoonfuls of dough into balls, then flatten with the bottom of a glass, and dip into granulated sugar.
Place sugar side up on a baking sheet, and place one ½ candied cherry in the center.
Bake for 12-14 minutes, remove from oven and allow cookies to cool before removing them from the baking sheet.
