Cool Your Summer with a Frozen Pina Colada!

Hot summers call for refreshing drinks. Rather than adding a ton of refined sugar to the drinks, I decided to try a healthier option. Thankfully, this doesn’t sacrifice the delicious flavor of the frozen treat. If you prefer a mocktail version that is kid-friendly, that is included in the recipe below.

A lot of Pina Colada recipes call for cream of coconut, which is a sweetened version of coconut cream. My refined sugar-free version uses the rich coconut cream that you can find on the top of a can of unsweetened coconut milk. The simple syrup is created by using powdered monkfruit. It provides the touch of sweetness you are looking for to balance on the other flavors of the drink.

The powdered monkfruit sweetener is typically a 1:1 ratio replacement for refined sugar, but with this recipe, we’re using a 1:2 (one part sweetener to two parts water) ratio because of the sweetness of the pineapple. Fresh, frozen, or canned pineapple works for this drink, but you’ll get the best results with fresh pineapple. Cut it into chunks using a pineapple corer and slicer. Freeze prior to blending!

Because of the 1:1 ratio, you can easily swap the monkfruit sweetener for standard sugar, if you prefer. Some of the benefits include:

Tools and Ingredients for a Frozen Pina Colada:

  • Small skillet or saucepan
  • Blender or food processor
  • Hurricane glasses
  • Cute paper straws
  • Monkfruit sweetener
  • Water
  • Pineapple chunks
  • Pineapple juice
  • Coconut cream
  • Light rum
  • Ice cubes

How to Make the Frozen Pina Colada:

Prepare the simple syrup by combining the powdered monkfruit sweetener and water in a small skillet. Stir to combine and heat until the sweetener dissolves completely, approximately 3-4 minutes. Remove from heat and set aside to cool.

Place the frozen pineapple, pineapple juice, coconut cream, rum, and one-quarter cup simple syrup into a blender and blend until smooth.

While the blender is still running, add the ice a little at a time until the desired consistency is reached.

Turn blender off and remove lid. Taste and add additional simple syrup, if desired, and blend for another 30 seconds to combine.

To serve, pour into glasses and serve immediately garnished with fresh pineapple slices. Enjoy!

Mocktail version:

Omit the rum and replace with 1 oz. coconut cream and 3 oz. pineapple juice before blending.

Ingredients

Sugar-Free Simple Syrup:

  • ¼ cup powdered monkfruit sweetener
  • ½ cup water

Remaining Ingredients:

  • 2 cups frozen pineapple chunks 
  • 8 oz. pineapple juice
  • ⅓ cup coconut cream
  • 4 oz. light rum
  • 6-8 ice cubes

You can use fresh, frozen, or canned pineapple for this recipe. For best results, use fresh pineapple that has been cut into chunks and frozen prior to blending.
