Keto Cobb Salad with Homemade Ranch Dressing

Salads aren’t just good in the summer — they’re delicious all year long! One of my favorite things about a Cobb Salad is the additional texture you get from the hard-boiled eggs, avocados, bacon, cucumbers, and bleu cheese. Any sliced chicken can be used for this salad but if you’re in a pinch, check with the deli of your local grocery store about pre-cooked breast pieces.

This Cobb salad is healthy and filling without being overly heavy. I always feel satisfied when enjoying one for lunch. They don’t give me that late-afternoon sluggish feeling that leaves me in need of a nap. I have a sensitivity to tomatoes (which are usually included in a Cobb salad); but if you want to add them, feel free to!

Ranch Dressing Ingredients: 

½ cup Avocado mayonnaise (or regular mayonnaise)
¼ cup Greek yogurt
1½ tablespoons fresh chives, chopped
1 tablespoon fresh dill, chopped
1 tablespoon fresh parsley, chopped
¼ teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
Pinch cayenne pepper
Sea salt and black pepper, to taste
1 teaspoon Worcestershire sauce
¼ cup buttermilk

Salad Ingredients:

1 large head Romaine lettuce, washed and chopped
4 strips thick-cut bacon, cooked crispy
4 hard-boiled eggs, sliced
¾ lbs. chicken breast, sliced
1 large avocado, sliced
1 medium cucumber, peeled and cut into half-rounds
3 oz. blue cheese
1 tablespoon fresh chives, chopped
1 large lime, cut into 8 wedges

Ingredients

Homemade Ranch Dressing

  • ½ cup Avocado mayonnaise (or regular mayonnaise)
  • ¼ cup Greek yogurt
  • 1½ tablespoons fresh chives, chopped 
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • ¼ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Pinch cayenne pepper
  • Sea salt and black pepper, to taste
  • 1 teaspoon Worcestershire sauce
  • ¼ cup buttermilk

Salad

  • 1 large head Romaine lettuce, washed and chopped
  • 4 strips thick-cut bacon, cooked crispy
  • 4 hard-boiled eggs, sliced
  • ¾ lbs. boneless, skinless chicken breast, sliced
  • 1 large avocado, sliced
  • 1 medium cucumber, peeled and cut into half-rounds
  • 3 oz. blue cheese
  • 1 tablespoon fresh chives, chopped
  • 1 large lime, cut into 8 wedges

Instructions

To prepare the ranch dressing, combine all the ingredients in a large bowl and whisk to incorporate. Taste and adjust seasonings as desired. Cover and refrigerate until
ready to use. The dressing can be made ahead of time and stored up to 3 days.



To prepare the salad, divide the Romaine lettuce among four serving bowls and top each bowl with equal amounts of bacon, hard-boiled egg, chicken breast, avocado,
cucumber, and blue cheese. Top with the fresh chives and serve immediately with the ranch dressing and/or fresh lime wedges on the side. Enjoy!
