Summer is calling out for these Key Lime Pie Dessert Cups! The no-bake recipe only takes 20 minutes to create four portable desserts. Add rum if you want a dessert for adults, or leave it out and have a kid-friendly option!

The summer heat takes a toll on my baking habits, so that’s why I love creating desserts that you can whip up without using the oven. These are also small (only 5.5 oz. per serving), so you’re going to get a taste, without it being heavy and sitting on you while it’s scorching outdoors.
Key Lime Pie is one of the flavors you’ll see dominating summer desserts, drinks, pies, etc. and often into early fall. If you’ve never tried them, they are fantastic for sweet treats! On their own, the limes are tart and somewhat bitter. That’s why they are used in sweeter desserts to give you a flavorful balance between the two.
Not only are these tasty options for summer desserts, if you’re hosting a party, these look great on the table. The bright green lime slices draw your attention against the cream cheese and crumbled vanilla wafers. With traditional Key lime desserts, you’ll often find graham crackers used. But I love the wafers. Feel free to change it up to match your preferences. Either way, they’re delicious!

Ingredients to Make Key Lime Pie Dessert Cups:
- Cream cheese
- Powdered sugar
- Key lime juice
- Fresh Key lime
- Vanilla wafers
- Whipped topping
- Rum (optional)
How to Make Key Lime Pie Dessert Cups:
In a bag, add vanilla wafers and mash with the flat side of a kitchen mallet. Divide evenly between the cups by sprinkling them in the bottom of each. In a large bowl, mix together rum, key lime juice, cream cheese, and powdered sugar. This should be thick on a spoon. If too runny add more powdered sugar.
Scoop into the cup over the vanilla wafers. Top with whipped topping, a sprinkle of vanilla wafers, and two slices of key limes (regular limes work too).
Serve and enjoy!
NOTE: If you want to make these kid-friendly, simply leave out the rum! They’re still delicious!

- 3 tablespoons key lime juice
- 1 whole key lime; sliced
- 15 vanilla wafers; crushed
- whipped topping
- 1 oz. rum (optional)
