I’m so excited to be featuring the Asian-Inspired Beef Cups recipe. This is so easy and tasty. It can be used as an appetizer or as a main entree. They work great for meal preppers, too!
Asian-Inspired Beef Cups

These beef cups are an additive- and sweetener-free twist on a popular dish from a large restaurant chain. They can be served as a main dish or an appetizer. The cups also make a great self-serve buffet “bar” option: simply set out the lettuce leaves, cooked meat filling, and garnishes and allow guests to construct their own. The Cilantro Lime Coleslaw on page 240 would be a nice addition to an Asian-Inspired Beef Cups bar.
Ingredients
- 2 teaspoons toasted sesame oil, divided
- 1 pound ground beef
- ½ cup diced red bell peppers
- 3 cloves garlic, minced
- 2 tablespoons coconut aminos
- 2 teaspoons unseasoned rice vinegar
- 2 tablespoons brown sugar substitute
- 2 teaspoons ginger powder
- 8 medium butter lettuce leaves, for serving
Garnish:
- 2 green onions, sliced
- 1 teaspoon toasted sesame seeds
- ¼ cup unsalted roasted peanuts, chopped
Instructions
Heat 1 teaspoon of the oil in a large skillet over medium heat. Cook the ground beef and bell peppers in the skillet, crumbling the beef as it cooks, until the meat is browned and the peppers are tender, about 10 minutes. Add the garlic and cook for 1 more minute. Drain if necessary.
Stir in the aminos, vinegar, brown sugar substitute, ginger powder, and remaining 1 teaspoon of oil. Continue cooking, stirring frequently, until the mixture thickens, about 10 minutes.
Serve in the lettuce leaves. Garnish with the green onions, sesame seeds, and peanuts.
Notes
The meat can be made up to 1 day ahead and reheated before serving. Store in an airtight container in the refrigerator.
