Ice cream sandwiches are an essential for the summer. But with the summer sales prices, it’s common for our local stores to be sold out. So what’s a parent to do? Make their own, of course!

With Shark Week being one of the most anticipated events of the summer, these cookie ice cream sandwiches are exactly what the kids (okay, the adults, too!) are going to want. Since they need time to freeze overnight, you can make this a two-day project with the kids. They can help build them and freeze, then enjoy them the next evening.

Ingredients You’ll Need to Make Mini Shark Bite Cookie Ice Cream Sandwiches:

For this particular recipe, I used packaged cookies to make it quick and easy. But if you prefer to make your own, they work great, too! Feel free to use chocolate chip, sugar, or any other flavor of cookies and ice cream that your family prefers. I have made up a batch (minus the gummies) for myself using frozen yogurt and they were absolutely delicious as well.

How to Make Mini Shark Bite Cookie Ice Cream Sandwiches:

Lay out six cookies with the inside facing up. Add one scoop of ice cream to the top of the cookies. Using a butter knife, smooth the edges and flatten the top of the ice cream.

Place a second cookie on top of the ice cream, facing down to create the sandwich.

Add a dab of ice cream on top of the cookie and place the gummy shark on top.

Using plastic wrap, cover or individually wrap the cookies. Freeze overnight.

Serve cold and enjoy!
