ONE POT CAESAR CHICKEN PASTA WITH BROCCOLI IS QUICK, EASY, AND TASTY!
One of my biggest complaint about cooking pasta dishes is having to drain the pasta. In my mind, it creates another dish (the colander) to wash and who wants more dishes? Not me! That’s why I wanted to create a pasta dinner that could be made in one pot without draining.
It also needed to be full of flavor. If I’m going to splurge on a pasta dish, I don’t want to eat a bland meal. This Caesar chicken pasta is far from bland. I included broccoli and mushrooms, although if you’re not a fan of either of those, they can be left out. Brussels sprouts are also another unique and tasty addition.
The chicken can be prepared the day before for quick preparation, or you can even use a rotisserie chicken. I like to marinate mine and cook in the Instant Pot. If you don’t have time to marinate the chicken, sprinkle it with Italian seasoning and cook.

HOW TO MAKE ONE POT CAESAR CHICKEN PASTA WITH BROCCOLI:
In a Dutch oven or large pot, combine the chicken broth, pasta, cooked chicken, broccoli, sliced mushrooms, garlic powder, salt, and pepper.
Mix well and heat to boiling over medium-high heat. Reduce the temperature to medium heat. Cook for at least 8 to 10 minutes, stirring occasionally. Most of the liquid will be absorbed during this cooking process.
Stir in the Caesar dressing and cook for an additional 1 to 2 minutes.
Remove from the heat and stir in half of the shredded Parmesan cheese. Serve topped with the remaining Parmesan cheese.
