When the ‘ber months start to roll in, you’ll start seeing a lot of recipes featuring pumpkin as one of the main ingredients. This recipe features pumpkin, but it’s not bread, cake, or pie. These cups also feature yogurt and vanilla granola. They are the perfect balance of creamy and crunchy without being a heavy option.
These snack cups can be made ahead of time and used for a grab-and-go breakfast, a mid-morning snack, afternoon snack, or to carry in your lunch. Even the kids will enjoy taking these with their lunches to school. If prepping ahead of time, I leave the whipped cream off the top and replace it with a little more yogurt, then sprinkle with the ground cinnamon.
I like to use vanilla granola in my cups, but there are other options including Bear Naked Granola’s Cinnamon flavor or Purely Elizabeth’s Pumpkin Cinnamon Ancient Grain Granola. Regardless of the flavor of granola that you choose, they pair well with the pumpkin and plain yogurt to give you a flavorful crunch. In the same way that I love a dish that gives me a sweet and savory combination, I love food that has an in-depth texture to it. That’s why I love these cups!
