Summer Patriotic Red, White, and Blue Poke Cake Dessert

A poke cake is an easy, quick dessert that adds colorful flair to your dessert table. This one is red, white and blue, so it's perfect for Memorial Day, 4th of July, and summer parties, and Labor Day!

Baking in the summertime is often something I avoid. Even with air conditioning, it warms the house and makes it uncomfortable. But there are some quick and easy desserts that are worth the heat.

This recipe makes things easy by using a box cake, or you can use your personal favorite classic white cake recipe! Either way, this cake is going to be delicious and moist thanks to the Jell-O. A poke cake can easily be created using a straw to poke the holes. The holes allow the Jell-O to seep in and give it a pop of color, too.

When pouring the Jell-O over the holes, I use a large spoon to distribute the liquid. You can also use squeeze bottles for this step.

Ingredients You’ll Need to Make a Poke Cake:

How to Make a Red, White, & Blue Poke Cake:

Preheat oven to 350 degrees F.

Mix cake mix per the directions on the box. Pour into grease 13×9 baking dish. Bake for 34 to 38 minutes until a toothpick inserted in the center comes out clean. Cool cake completely.

Take a straw and poke holes in four to five rows along the cake lengthwise.

In one bowl mix together one cup boiling water and red gelatin. In a second bowl mix together one cup boiling water and blue gelatin. Stir well.

Spoon red over one row of holes then spoon blue over another row of holes. Rotate until each full row is filled.

Mix together powdered sugar, cream cheese, and cool whip. Ice the top of the cake.

Slice strawberries and make lines with strawberries then blueberries and repeat until finish. Cool in fridge until ready to serve.

  • 3 eggs
  • 1⁄2 cup vegetable oil
  • 1 cup water
  • 1 package (3oz) package strawberry gelatin
  • 1 package (3oz) package berry blue gelatin
  • 2 cups boiling water for gelatin
  • 1- 8oz package cream cheese
  • 3/4 cup powdered sugar
  • 8 ounces cool whip; thawed
  • 6 strawberries; sliced
  • 2 cups blueberries
