Roast Beef Rollups are a delicious, low-carb meal prep lunch option!

While raising teenage boys, I have discovered that we do not have leftovers to take for lunch as often. That led me to searching for something I could easily prep and that tasted amazing. Roast beef and provolone cheese are a delicious combination on a sandwich, but since I have been trying to stick to a low-carb diet, I went sans bread on this recipe!

On Sunday evenings, I enjoy planning our weekly dinners, prepping vegetables for the recipes, and putting the meat in the fridge to thaw. This recipe enables me to make 15 rollups in about 15 minutes. How easy is that?! Now I no longer have to rush throwing something together every morning before I head out the door to work.

Each serving is three rollups paired with two low-carb sides of your choice. You could include a small side salad, fresh fruit, or treat yourself to a low-carb dessert!

Ingredients:

15 non-smoked Provolone cheese slices
1 cup fresh arugula
6 oz. roast beef, sliced thin
¼ cup prepared horseradish sauce

How to Make Roast Beef Rollups:

Place Provolone cheese slices on a clean work surface and divide the arugula and roast beef slices between them.

Top each with a small drizzle of horseradish sauce before rolling the cheese around filling. Secure each rollup with a toothpick and either serve immediately or divide between 5 divided storage containers for an easy grab-and-go lunch option for the week ahead. Enjoy!
