Mornings are a little hectic in our house. My boys will often skip breakfast if they’re in a hurry. They are up and in the weight room for workouts by 6:30 a.m. at least three times per week. Lunch isn’t scheduled until 11:30 a.m., so five hours without something in their belly is a bit much. These sandwiches are easy to wrap up to eat after workouts and keep them feeling full until they can grab a snack a couple of hours later.

Sara Lee® Artesano™ Potato Bakery Bread is one of the best breads I’ve ever tasted. We often ignore the end pieces of bread, but one loaf of this completely changed our habits. Not a single piece goes wasted! It is thickly sliced, thus the reason it’s perfect for a breakfast toaster. The thick pieces absorb the egg mixture to create a solid base for a sandwich. The mouthwateringly soft texture is the perfect way to change up a crispy, crumbly standard toaster sandwich!
Each slice is full of real potato flavor, as well as sea salt, and a hint of butter to create savory sandwiches. As a mom, I want to give my kids food that they enjoy while also making sure it’s not full of unhealthy additives. Sara Lee® Artesano™ Potato Bakery Bread is free from high fructose corn syrup, artificial flavors, and artificial colors.

Equipment to Make an Ultimate Breakfast Toaster Sandwich:
12″ High-Side Skillet
Spatula
Large Bowl
Whisk
Baking Dish or Pie Plate
Serving Platter
Ingredients for the Ultimate Breakfast Toaster Sandwich:
4 large eggs
1 cup milk
A small bunch of fresh spinach, chopped or left whole
1 lb. sliced mushrooms, sautéed
10 pre-made sausage patties or 1 pound roll of ground sausage
10 slices of bacon
1 loaf Sara Lee® Artesano™ Potato Bakery Bread (2 slices per sandwich you wish to make)
Garlic powder, to taste
Salt and pepper, to taste
How to Make an Ultimate Breakfast Toaster:
Slice your roll of ground sausage into 10 patties. If using pre-made sausage patties, remove 10 from the package. Cook in a large skillet until browned and thoroughly cooked.
Place the sausage patties on a plate lined with paper towels to absorb any grease and set aside.
Cook the 10 strips of bacon until crispy. Drain on a plate lined with paper towels and set aside.

Reserving one tablespoon of the bacon grease, sauté the mushrooms for three to five minutes over medium heat until soft. Remove from the pan and drain on a plate covered with paper towels. Set aside.

Whisk the four eggs and 1 cup of milk in a large pie plate or baking dish. Season to your liking with salt and pepper.

Melt two tablespoons of butter in a large pan over medium heat.

Soak two pieces of Sara Lee® Artesano™ Potato Bakery Bread in the egg/milk mixture for 10-15 seconds per side, allowing the bread to soak up the liquid.

Allow the bread to drip a few seconds then place in the pan with the melted butter. Cook until golden brown, then flip with a spatula and cook the other side until golden brown, too.

Cook two slices per sandwich that you wish to make. Each loaf of Sara Lee® Artesano™ Potato Bakery Bread will make approximately seven sandwiches.
Once your egg-soaked bread is cooked, it’s time to build your sandwich! Place two pieces of sausage on one piece of the bread, filling the middle with mushrooms, spinach, and bacon. Top with the second piece of bread.
