Sheet Pan Chorizo with Spanish-Style Potatoes

Sheet Pan Chorizo with Spanish-Style Potatoes is a flavorful dish for breakfast, lunch, or dinner. Added bonus: it all cooks using one pan!

I’ve been enjoy chorizo at my favorite Mexican restaurant, but until recently, I haven’t seen it available at the grocery store. My husband and I both always check out the discount shelf of the meat department when shopping and stumbled upon a few packages that were too good of a price to pass on.

What is Chorizo?

Chorizo is a highly-seasoned sausage that is chopped or ground and typically used in Mexican and Spanish dishes. Mexican chorizo is usually cooked raw while Spanish chorizo is smoked. Either way, it’s a tasty treat!

We used the smoked Spanish-style for this dish, so it was slightly red in color, due to the smoked paprika used to season it. These were on the sweeter, milder side, but you can also find chorizo available in hotter, spicier versions.

Just a little FYI: chorizo is not a health-food. It is a high-fat, high-calorie, a high-sodium food. Use it sparingly or as a special treat!

What you’ll need for Sheet Pan Chorizo & Spanish-Style Potatoes:

First and foremost, you’ll need a sheet pan! For years, I used cheap, thin sheet pans. It wasn’t until I discovered the value of owning a good set. Personally, I love using USA Pan’s half sheets for my sheet pan recipes. Ever had your pan pop up, making it uneven in the oven? USA Pans won’t do that!

Ingredients:

1 medium sweet onion, cut into thin wedges
2 tablespoons extra virgin olive oil, divided
1 teaspoon garlic powder, divided
Sea salt & black pepper, to taste
1¼ lbs. chorizo sausage links
20 oz. fingerling potatoes, cut into equal bite-sized pieces
1½ teaspoons smoked paprika
1 tablespoon tomato paste
3 tablespoons fresh parsley, chopped

Mild or Spicy Spanish-Style Chorizo works well for this recipe.

Instructions:

Place top oven rack in the center position and pre-heat oven to 425°F. Line a large, rimmed baking sheet with parchment paper or a non-stick baking mat. Set aside.

Add onion, one tablespoon olive oil, and a half teaspoon of garlic powder to a medium-sized bowl. Season with salt and black pepper, to taste, and toss to combine. Set aside.

Place the sausage links onto the prepared baking sheet and spread the seasoned onions around them in a single layer without overcrowding. Set aside.

Place the potatoes to the same bowl used for the onions and drizzle with the remaining olive oil. Add the smoked paprika, tomato paste, and the remaining garlic powder. Season with salt and black pepper, to taste, and toss to combine.

Arrange the seasoned potatoes onto the same baking sheet, making sure all ingredients are spread into a single layer without overcrowding. Place baking sheet into the pre-heated oven for 35-40 minutes, turning the sausage, onions, and potatoes after 15 minutes. The potatoes should be fork tender when done.

Remove the sheet pan from oven and transfer the roasted potatoes to a medium-sized bowl. Toss with fresh parsley to combine. Slice the sausage and serve immediately along with the roasted onions and Spanish-style potatoes. Enjoy!
