Bring the beach to your dinner table with Shrimp Scampi!

One of my favorite activities when vacationing near the shore is enjoying fresh seafood – especially shrimp! Thankfully we have a shop where we can purchase fresh fish and seafood nearby. It’s the next best thing to same-day caught meals from the ocean. During our latest vacation to Tybee Island, Georgia, we indulged in all of our favorite dishes, including shrimp scampi.

I wanted to bring a bit of our trip back home with us and this was the perfect recipe! But, of course, I highly recommend booking a trip to enjoy the quaint little beach town in-person for the absolute freshest meal. If a vacation isn’t in your plans right now, this is a very delicious, suitable option!

This recipe looks like it requires a lot of fancy work, but honestly, it’s super easy! I absolutely love dishes that I can serve my family and for dinner parties that look like I’ve been in the kitchen all day. Using only a pot and skillet, clean-up is easy, too.

A warm, rich flavor of lemon and butter is what pulls this dish together when it’s time to serve. You can plate individually or put all on a big server and let your family or guests serve themselves. Choose a block of good quality Parmesan cheese that you can freshly grate over the top.

Ingredients and Tools for Shrimp Scampi:

  • Spaghetti
  • Unsalted butter
  • Red onion
  • Garlic cloves
  • Ground cumin
  • Sea salt and black pepper
  • Large shrimp
  • Fresh parsley
  • Lemons
  • Parmesan cheese
  • Large pot
  • Skillet
  • Colander

How to Make Shrimp Scampi with Spaghetti:

Heat a large pot of salted water over medium-high heat. Add spaghetti and cook according to package instructions.

While the spaghetti is cooking, add butter to a large skillet set over medium heat. Add red onion, garlic, and ground cumin. Season with salt and black pepper, to taste, and stir to combine. Cook, stirring occasionally, until the onion softens and begins to develop some color, approximately 6-7 minutes.

Add the shrimp to the skillet and cook, stirring frequently, until the shrimp changes color and starts to curl slightly, approximately 2-3 minutes. Do not overcook.

Remove skillet from heat and add the chopped parsley and a couple squeezes of fresh lemon juice. Season with additional salt and black pepper, if desired, and stir to combine. Set aside.

When spaghetti is ready, remove from heat and pour into a colander. Rinse briefly with warm water to prevent sticking. Shake off excess moisture and transfer to a serving platter. Top spaghetti with the cooked shrimp mixture and serve immediately with the remaining lemon wedges and some freshly grated Parmesan cheese, if desired. Enjoy!
