A Delicious Southern Treat!
Oh, Sun Drop Cake! Let me apologize for the terrible photography. I made this back in 2013 when I was really just getting started blogging. I will be updating the photos soon. The recipe practically went viral last year and my credit link to the recipe on the blog was stripped from all of the shares. It is frustrating when you work so hard only to have something stolen. Most of the posts were taken down after some research and notification to the person who posted without proper credit, but I ended up with an ugly watermark to temporarily cease the problem.
Sun Drop is a delicious citrus-flavored soda that was created in the South. Where, exactly, is a little sketchy but regardless, it’s a staple around these parts. As of 2011, the delicious concoction is available nationwide. If it’s not in your area, put in a request.
I have also made an Instant Pot version of this cake. It’s quick, easy, and tasty, although this recipe is still my favorite. The IP version is a little more dense and doesn’t get the beautiful golden color that you can achieve in the oven.
This cake can be made with any type of soda but you will thoroughly enjoy the taste you get from a Sun Drop!
Southern Sun Drop Cake
Sweet Southern Sun Drop Cake

Ingredients
- 1 box Yellow or Lemon Cake Mix
- 3 Eggs
- ¾ cup Oil
- 10 oz Sun Drop
Glaze
- 3 oz Sun Drop
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
Instructions
Preheat oven to 350 F
Mix up cake mix with eggs and oil.
Add in Sun Drop
Spray pan and pour in cake mix.
Bake 45-50 minutes (depends on your pan)
Beat glaze ingredients together and pour over cake
Serve and Enjoy!

Yes! It definitely can be made with other drinks such as 7-Up, Sprite, etc. Sun Drop is found mostly in the Southeastern region of the US but has spread to other areas.

I live in Florida and have never heard of Sun Drop. I found a blurb that says it is citrus based and introduced in 1928 in St. Louis, MO.
