Sun Drop Cake – Instant Pot Style!

Sun Drop Cake is a staple at potlucks, parties, and for everyday desserts here in Lynchburg. Our family likes to call it the “nectar of the South“. Check out this beautiful IP cake!

Instant Pot Cakes Recipes have become a new favorite obsession of mine! They are a lot more moist because of the steam, but oh so worth it. If you have a craving for a cake that resembles the texture of bread pudding, you’ll want to give this a try.

What is Sun Drop?

In simple terms, it’s a soda. Specifically, it’s a citrus soda that is bursting with lemon, lime, and orange flavors. One sip and you’ll fall in love! My personal favorite is the glass bottles that contain a little pulp.

Instant Pot Sun Drop Cake

Discover the "nectar of the South" with this tasty Instant Pot Sun Drop Cake!

Prep Time 5 minutes
Cook Time 45 minutes
Additional Time 10 minutes
Total Time 1 hour

Ingredients

  • 1 cup water
  • 1 box cake mix (white, yellow, or lemon)
  • ¾ cup Sun Drop (or soda of choice)
  • ¾ cup Vegetable Oil
  • 4 eggs
  • Powdered sugar (for dusting)

Instructions

  1. Set your Instant Pot to 'Saute' mode for 5 minutes and add the 1 cup of water.
  2. Mix the cake mix, soda, oil, and eggs in a large bowl until no lumps remain.
  3. Spray your springform pan with nonstick spray.
  4. Pour cake mix into springform pan and gently lower into Instant Pot with trivet.
  5. Change settings to 'Manual', 'High Pressure', for 45 minutes.
  6. Once finished, to a quick-release and carefully remove the cake from the IP.
  7. Allow to cool for at least 10 minutes.
  8. Dust with powdered sugar and enjoy!
