Instead of fixing lunch on the weekends, our family often likes to make an appetizer and snack – especially during football season! Dips are always a welcomed option. This one is a favorite of ours because it is flavorful and simple. Everything comes together in less than 15 minutes and it can be enjoyed as-is or warmed, if you prefer. As a no-bake appetizer, this is a great choice for taking to parties and cookouts.

The Southwest-style corn may come in a variety of names, but what you’re looking for is whole kernel corn that includes poblano and red peppers. I have also seen versions that only include the red peppers. Any of the varieties will work! I chose mild cheddar cheese for this recipe, but you are welcome to use your personal favorite type of cheese. That is one of my favorite parts of cooking — you can always change one ingredient and completely change the flavor to fit your taste buds.

This dip can be kept in an air-tight container in the refrigerator for up to 3 days. When we’re hosting dinners or parties, I like to have a dip or two on hand to pull out for our guests while we’re working on the remainder of the food.

Ingredients to Make Southwestern Corn Dip:

  • Southwest-style corn
  • Mayonnaise
  • Sour cream
  • Mild cheddar cheese
  • Spring onions
  • Minced garlic
  • Chili powder
  • Salt
  • Pepper

How to Make Southwestern Corn Dip:

Open and drain juice from corn. Place corn into a medium bowl. Add in mayonnaise and sour cream.

Add in chopped spring onions and cheddar cheese. Stir well.

Add in chili powder, minced garlic, salt, and pepper. Stir well.

Serve with potato chips or tortilla chips.

To serve warm, heat in microwave one minute then mix well.

Ingredients

  • 2 cans southwest corn; drained
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 2 cups mild cheddar cheese
  • 3 stalks spring onions; chopped
  • 1 tablespoon minced garlic
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
