Plain Waffle Ice Cream Sandwich

  • 1 qt. vanilla bean ice cream
  • 4 square waffles, cut into 8 rectangles

How to Make the Ice Cream Sandwiches:

In my opinion, anything homemade is always better. I think it’s because of that extra love that goes into the recipe. These aren’t entirely made from scratch, but you and the kids will love them, regardless. How many sandwiches have you had that were crumbly or easily pulled apart? The waffle is the ultimate solution to this.

If you want to keep the sandwiches super simple, opt for store-bought frozen waffles. If you want to play around with flavor or prefer to make your own in a waffle iron, go for it! Either way, those lovable boxes are going to hold ice cream the way it cradles syrup.

Using a large, rimmed baking sheet, arrange your waffles in a single layer and bake for approximately 10 to 12 minutes, flipping halfway through. Once golden brown in color, remove from the oven and the baking sheet to cool.

Add a scoop of ice cream to four of the waffles and spread into an even layer. Top with the remaining waffles to create a sandwich.

Return the sandwiches to your baking sheet and freeze for at least 30 minutes to firm up. Once they’re firm, remove from the freezer to dip in chocolate syrup and decorate to your heart’s desire!

Summertime is going to be extra cool with these cute and easy-to-make Waffle Ice Cream Sandwiches!

Cook Time 12 minutes
Additional Time 30 minutes
Total Time 47 minutes


  • 1 quart vanilla bean ice cream
  • 4 square waffles, cut into 8 rectangles

Optional Topping Ideas:


Pre-heat oven to 350ºF and arrange the waffles on a large, rimmed baking sheet.

Place baking sheet in pre-heated oven and bake for 10-12 minutes, flipping the waffles halfway through. Once waffles are golden brown, remove baking sheet from oven and set aside to cool for several minutes.

Add a scoop of ice cream to four of the waffles and spread into an even layer. Top each with one of the remaining toasted waffles to create a “sandwich.”


Place the ice cream sandwiches back on the baking tray and place in the freeze for 30 minutes to firm up. Remove baking sheet from freezer and top with chocolate sauce, sprinkles, and/or chopped nuts, if desired, right before serving. Enjoy!
